Date Bars

Ingredients:
1 cup unsifted flour
1 tsp. baking powder
½ tsp. salt
2 cups sugar
2 cups chopped dates
1 ½ cups chopped walnuts
½ cup flaked coconut
½ cup melted butter
2 tsp. pure vanilla extract
Stir together flour and baking powder; add salt and sugar to flour mixture and stir well. Add dates. Mix with fingers to separate dates. Stir in walnuts and coconut. In a small bowl, beat eggs enough to blend yolks and whites. Add to flour mixture, along with melted butter and vanilla. Stir to mix thoroughly. Turn in to buttered 9×13 inch pan and bake in a 325 degree oven for 40 minutes. Note: Do not overbake or bars will turn out dry. These bars freeze well, so they can be made ahead of time.
