Ingredients:
1 cup unsifted flour
1 tsp. baking powder
½ tsp. salt
2 cups sugar
2 cups chopped dates
1 ½ cups chopped walnuts
½ cup flaked coconut
½ cup melted butter
2 tsp. pure vanilla extract
Stir together flour and baking powder; add salt and sugar to flour mixture and stir well. Add dates. Mix with fingers to separate dates. Stir in walnuts and coconut. In a small bowl, beat eggs enough to blend yolks and whites. Add to flour mixture, along with melted butter and vanilla. Stir to mix thoroughly. Turn in to buttered 9x13 inch pan and bake in a 325 degree oven for 40 minutes. Note: Do not overbake or bars will turn out dry. These bars freeze well, so they can be made ahead of time.
