National Peanut Butter & Jelly Day!

by

Ah, the camera phone. Oh-so-very convenient, yet never seems to do a dish justice. Such is the case with this photo of Peanut Butter and Jelly Ice Cream. Yes, I said it, and such a thing does exist. I took this photo a few months back while dining at Emeril’s Tchoup Chop in Orlando. The pastry chef that made this dish especially for our table was the sweetest woman. While her name escapes me now, she was the first person I thought of when I learned that today – April 2 – is National Peanut Butter & Jelly Day!

Beyond the famed sandwich, what are your favorite PB&J creations?

Wow, who knew there was such a thing! And that ice cream looks delicious…I must try to make a vegan version…(adding it to my list)

I just made the yummiest Peanut Butter and Jelly Muffins. The recipe is on my blog:

Let me know what you think if you give them a try.
