In Honor of Cinco de Mayo: A Salsa Recipe

What is Cinco de Mayo without salsa? If you’re in need of a good recipe, or just want to try something new, test out this recipe (which I first shared at our 1st anniversary potluck). It’s a super chunky, slightly spicy, avocado-loaded take on classic salsa.  Serve with your favorite tortilla chips and you’ll have a fiesta on your hands in no time. Okay, maybe throw in a margarita, as well. Enjoy!

 4          large tomatoes
3-4       green onions, chopped
1/2       cup cilantro, finely chopped (packed)
2-3       garlic cloves, finely chopped
2          tablespoons fresh lime juice
1-2       jalepenos or Serrano chiles, finely chopped
1          avocado, chopped
            Salt and pepper to taste

Add all ingredients except avocado to bowl and stir to combine. Once combined, add avocado and gently stir.
