Ahoy matey! As the weather turns colder, I am a huge fan of “set it and forget it” slow cooker recipes. They warm the heart, soul and wallet! This recipe is a family favorite and very convenient with minimal prep time. Plus, who can resist the name “Pirate Stew”? Shiver me timbers.
Pirate Stew (recipe courtesy of Fix-It and Forget-It Big Cookbook)
Makes 4-6 Servings
Prep. Time: 15 minutes
Cooking time: 6 hours
Ingredients
¾ cup sliced onion
1 lb ground beef
¼ cup long-grain rice, uncooked
3 cups diced raw potatoes
1 cup diced celery
2 cups canned kidney beans, drained
1 tsp. salt
1/8 tsp. pepper
¼ tsp. chili powder
¼ tsp. Worcestershire sauce
1 cup tomato sauce
½ cup water
Directions
Brown onions and ground beef in skillet. Drain. Layer ingredients in slow cooker in order given. Cover and cook on low 6 hours or until potatoes and rice are cooked.
Pro tips:
I usually substitute 1 lb of ground turkey for the beef and add a generous helping of Tabasco Sauce for extra kick. If you are tight on time, you can also cook this recipe on high for 3 hours.
