Ingredients
3 eggs
1 1/2 cups sugar
1 cup canola oil
1 cup non-fat cottage cheese
1 cup mashed ripe bananas, about 2 bananas – as brown as possible
3 cups flour
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
Optional
1/2 cup chopped walnuts
1 cup chocolate chips
Makes 2 medium or 1 large loaf in loaf pan, or 25-30 muffins.
Directions
Preheat oven to 350 degrees. Beat the 3 eggs until thick and foamy, and then add sugar and canola oil. Stir in cottage cheese, mashed banana and nuts/chocolate chips. Sift together flour, salt, baking soda and baking powder, and add to wet mixture. Fold in walnuts and/or chocolate chips. Spoon batter into loaf pan and bake for about 45 minutes, or 20 minutes for muffins.
