Some of you might think of salad as far from satisfying or filling. I used to agree with you, back when “salad” just meant a handful of lettuce, drenched in dressing, alongside a large pizza you’re inhaling. Been there, done that, no regrets. But, I must say, salad – the non-wimpy, robust kind – has become a main course favorite of mine.
When it comes to the greens, my motto is “the busier the better.” Give me lots of color, lots of texture, and lots of flavor. In fact, I prefer when the amount of toppings outnumbers the lettuce. The beauty of salad is the ability to alter the flavor profile according to your topping preferences. Below is my go-to topping selection for a refreshing weeknight salad. Of course, the mix isn’t complete without a delicious dressing to tie it all together and I’m a fan of the homemade variety!
Go-To Salad Mix
1 package romaine lettuce
1/2 cup organic cherry tomatoes, sliced in halves
1/2 English cucumber, sliced
1/2 Granny Smith apple, sliced
1/4 cup fresh corn, cold
6 slices salami
2 Tbsp. goat cheese
2 Tbsp. dried cranberries
1 Tbsp. sliced almonds
Sweet and Zingy Homemade Dressing
2 Tbsp. home-harvested honey
2 Tbsp. Dijon mustard
1/3 cup olive oil
1/3 cup balsamic vinegar
