I remember when Vosges introduced Mo’s Milk Chocolate Bacon Bar and people thought it was the wildest thing.
“Bacon and chocolate?!?!?!,” they would gasp. “That’s crazy!”
Now, but seven short years later, it’s not so strange. Today, bacon is popping up in all kinds of unexpectedly sweet places like donuts, pie, even soda.
Even I, a self-proclaimed bacon lover, know when too much is too much, and bacon mania seemed to be spiraling out of control. But when I stumbled upon the ridiculously easy recipe for Chocolate-Covered Bacon I had to take the leap. And I’m sure glad I did. It was sweet, smoky, salty and sinful. And the best part, it was easy to make ahead, so this would be great for a party with kids and adults alike.
Chocolate-Covered Bacon
Ingredients
12 thick-sliced bacon strips (about 1 pound)
12 wooden skewers
1 cup semisweet chocolate chips
1 tablespoon shortening
Maldon Salt, for finishing
Directions
Thread each bacon strip onto a wooden skewer. Place on a rack in a large baking pan. Bake at 400°F for 20-25 minutes or until crisp. Cool completely.
Combine chocolate chips and shortening; melt in a microwave and stir until smooth. With a pastry brush, coat bacon on both sides with melted chocolate. Sprinkle on Maldon Salt. Place on waxed paper-lined baking sheets. Refrigerate until firm. Store in the refrigerator.
