It’s that time of year again. The time when the sniffles come back, flannel sheets come out and soups are “all the rage” on Pinterest. If you are like me, you catch on to this soup-frenzy and want it for every meal! I stumbled across this recipe for 5-Ingredient Easy White Chicken Chili, courtesy of Gimme Some Oven, during a recent Pinterest update, and boy did it kick my sniffles away.
Not only was this soup delicious, it was slightly spicy (a must have for getting rid of sniffles) and it was simple to make. This recipe will definitely be something I make again in the near future.
5-Ingredient Easy White Chicken Chili
Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes
Yield: 2-4 Servings
Ingredients:
- 6 cups chicken broth
- 4 cups cooked shredded chicken
- 2 (15-oz) cans Great Northern beans, drained
- 2 cups salsa verde (store-bought or homemade)
- 2 tsp. ground cumin
Optional toppings:
- Diced avocado
- Chopped fresh cilantro
- Shredded cheese
- Chopped green onions
- Sour cream
- Crumbled tortilla chips
Method
Add chicken broth, shredded chicken, beans, salsa and cumin to a medium saucepan, and stir to combine. Heat over medium-high heat until boiling, then cover and reduce heat to medium-low and simmer for at least 5 minutes. Serve warm with desired toppings.
