Working in food PR is never good for the waistline, especially when you’re working on a project that features a delicious recipe! Such was the case last week when I was working on a St. Patrick’s Day project for our client, the California Raisin Marketing Board, which included a yummy Irish Soda Bread recipe. After working with the recipe, I found myself with an irresistible craving for Irish Soda Bread. My fiancé thought I was crazy, but that night, there I was baking away in the kitchen after dinner.
There’s nothing better than a thick slice of warm soda bread slathered with butter – especially when you’ve been craving it all day! Plus, it was super easy – because soda bread uses baking soda for leavening rather than yeast, there was no waiting for the bread to rise and it was ready in about an hour. I also have to admit, with a dense texture similar to a scone or biscuit, a slice is great for breakfast.
In honor of St. Patrick’s Day, I feel compelled to share the recipe and spread the craving. So, here it is (from our client, the California Raisin Marketing Board):
Irish Soda Bread
Prep time: 10 minutes
Cook time: 50 to 55 minutes
Yield: 10 servings
3 cups flour
1/3 cup sugar
2 teaspoons baking powder
3/4 teaspoon baking soda
3/4 teaspoon salt
1 cup buttermilk
1/4 cup melted butter
1 egg
1 cup California raisins
Preheat oven to 350°F and line a baking sheet with parchment paper. Stir together flour, sugar, baking powder, baking soda and salt in a large bowl. Stir in buttermilk, butter and egg until well mixed; stir in raisins. Knead several times on a lightly floured board then shape into a ball. Place on prepared baking sheet and flatten slightly. Cut a small x in the top and bake for 50 to 55 minutes or until a sharp knife inserted in the center comes out clean.
