I am always on the lookout for creative ways to eat veggies.
Though our potluck theme this year was All-American, I decided to make a summer salad based on my time living in southern France. I figured hey, they gave us the Statue of Liberty, and what’s more American than that?
I love this salad because it’s cool, crisp and refreshing. Just perfect for those hot afternoon barbecues!
Recipe: Mediterranean Summer Salad
Ingredients
- 3 large Hot-House Cucumbers
- 2 cups Cherry Tomatoes
- 3 Yellow Bell Peppers
- 1 cup Feta Cheese
- ½ cup Italian Dressing
Instructions
- Cut all vegetables into small, bite-sized chunks.
- Combine in large bowl.
- Dress with cheese and Italian dressing of your choice.
- Serve cold.
